Racing Frequency

Today I'm linking up with Erika at MCM Mama Runs, Marcia at Marcia’s Healthy Slice, and Patty at My no-guilt life for Tuesdays on the Run.

Today the topic is How Often Do You Race?

My racing pattern lately averages about a race every 2 months.

So far this year I have run in 3 races (all half marathons) - Jail Break Run, Run Like A Diva, and Running with the Cows.

I have another 3 planned (mixed distances) - Baytown Bud Heatwave 5 mile, Southern Star Brewing Co. 5k, Houston Half Marathon.

I have to admit, I am looking for more!  I would love to race at least once a month.  I've been eyeing the Texas Bridge Series... 3 races, 3 months... with some big hills (over bridges).

Through my ambassadorship with Level Up Runs, I race in Virtual Runs once a month. The virtual runs do help with motivation and speed, but it isn't the same as toeing the line on race day.

Vegan Tex-Mex Loaded Baked Potato

I love a baked potato... seriously, who doesn't. When you combine it with healthy ingredients, it makes it a meal upon itself.

I am a fan of spicy food, so this baked potato has a little spice to it from the pico de gallo. I've also added black beans for a little protein.

I recently learned that you can make baked potatoes in the crockpot, they turn out just like the oven baked ones... so no heating up the kitchen!

The cheese sauce is from the Forks Over Knives cookbook.  It is... oh, so good... I could just eat it plain with a spoon,

Workouts - Last Week Today - June 26

This week I got back in my routine of running (for the most part).  My mileage is low, and I'm ok with that. The heat is in full swing in Houston and I'm trying to get myself acclimated to it again. I am continuing to wear my Jawbone Up24 in the hopes that it motivates me to get 10k steps in, especially on the non-running days. I've found when I'm good, I'm good... then the bad days happen.

I signed up for 2 races in the upcoming months.  The Baytown Bud Heat Wave 5 Mile (doesn't the name just make you want to cringe?)... it is on the 4th of July.  I also signed up for the Southern Star Brewing Co. 5k... it is on August 6.

Here is how my week shook out:

Sunday - Easy 6 miles (average pace 11:54).  I managed to take a tumble within the first mile, and I learned my favorite trail is closed for repairs due to storm damage... had a good run anyway!  Total steps 18,453.



Monday - Rest. Total steps 3,514.

Tuesday - Easy 3 miler with Anam (average pace 11:25). Total steps 1…

5 Ways To Stay Safe In The Heat

Summer is in full swing here in Houston and it is heating up... with our humidity, that makes it super steamy.  Other parts of the country are experiencing heat records.  While I would prefer being warm to being cold... the summertime heat is no joke!



The heat can really be harmful to you... dehydration, heat exhaustion, heat stroke are not things to take lightly.  What would happen if you were out on a solo run and were overcome with heat?



Several precautions can be taken to minimize any impact the heat may cause to you.  I feel that my body becomes acclimated to working out in the heat, but it does take time.  These are a few things that I do to help .

Run when it is cooler out... this means getting up at the @ss crack of dawn or running in the evenings.  I'm not a morning person, so I'm getting out for my runs …

May The Forth Be With You Virtual Race Recap

Today the topic is the weird stuff that happens/you see at races or out on the run? I don't have much to share... not sure if it is because I don't see much weird stuff when running, or that I have just forgotten it. So, I'm sharing a recap from my last virtual race in May.

I signed up to run the May The 4th Be With You Virtual Race in May.  I opted to run it as one of my training tempo runs.  I thought the challenge of it being an actual race would assist with motivation.

The May The 4th Be With You  Virtual Run, was organized by Level Up Runs.  This was the second virtual run I ever participated in, and I enjoyed this experience as much as the first.  I signed up for the 10K distance as it fit in great with the training I was doing for my half marathon.

Spicy Coleslaw

Spicy coleslaw is one of my most requested recipes for summer cookouts.

This recipe is an attempt at recreating the spicy coleslaw a friend from Kansas used to bring to our driveway parties. When we moved, I asked him for the recipe... but it was one of those that was never written down and changed every time he made it.

Workouts - Last Week Today - June 19

This week we wrapped up our Colorado vacation and I got a few runs in once we got back.

While we had a blast in Colorado, I was happy to be home... I missed my fur kids, and I missed my routine.

Here is how this week shook out:

Sunday - Went hiking and site seeing... found a short trail that led up to a waterfall.  It was beautiful.  We also took a very long drive over the Rocky Mountains and the scenery was just incredible. Total steps 9,141.

Monday - Left the mountains and headed back to Denver for our last full day in Colorado.  By the time we got to the hotel and dropped off the rental car, we were drained.  We ordered in Chinese and chilled. Total steps 3,928.

Tuesday - We took advantage of the late afternoon flight and headed to grab brunch. When I found how close we were to Voodoo Doughnuts, we had to walk over to there.  Once we got home, we were greeted by 2 very happy pups, the cats didn't seem to care. Total steps 7,921.

Wednesday - Back to the regular routine.  I was exhaust…

Five Favorites From Colorado Trip

Today's theme is favorites, I thought I would share with you my 5 favorite experiences from my recent trip to Colorado. There were loads of fun times and natural beauty.  These are the 5 things that stuck in my mind.

Soaking in the Hot Sulphur Springs - these are small pools filled with natural hot mineral filled water.  It was so relaxing to go for a soak after a day spent camping.  It was so quiet there, a nice respite from the tons of screaming kids that flooded the campsite.
I love to dine out in Colorado... most places have a very good selection of vegetarian/vegan dishes.  At Four Friends Kitchen in Denver I had a delightful breakfast of CRISPY TOFU GRITS (tofu battered in gluten-free flour and fried, coconut milk grits, butternut squash, diced heirloom tomatoes, sautéed kale, complimented with sweet pepper co…

Awesome Pasta Salad

Summer time is upon us, and to me it means a lot of outdoor entertaining and barbeques. I tend to always make a pasta salad as a side dish during the summer.

This pasta salad I created for my sister after she had given birth to her twin girls.  She loved this salad and I knew I was on to something!

Workouts - Last Week Today - June 12

This week's mileage was dismal.

I feel like I am in a slump... and I don't really like it!

I dug out my Jawbone and got it charged up so at least I could make sure that I was getting in at least 10k steps.

Sunday - Last day at deer camp with the hubs. We did a little hiking.

Monday I made it to the Goose's Acre Running Club social run for an easy 3.25.

Tuesday morning I work up with severe pain in my foot... it hurt to bend my toes, it hurt to walk.  I hobbled off to work and spent a lot of the day icing my foot at my desk.

Wednesday my foot felt better, but still a little rough around the edges... wasn't hobbling as much, but stiill iced it a bit.  Thursday morning it was feeling 100%, and good thing because the hubs and I headed to the mountains in Colorado to spend time with family.

Thursday - we spent the day in Denver walking around downtown before heading up to the mountains. I did get in 11,519 steps.


Friday - headed up to the mountains for Hot Sulfur days.  We sort-of …

Running Gear... how much is enough?

Today the topic is the Running Gear - are you a hoarder or minimalist?

I think I fall about in the middle.  While I am newish at running, I haven't had the time yet to build up a huge amount of running clothes, shoes or gear.  However, I have found that once I find a brand/style that I like... the stocking up begins.

Shoes are one thing that I tend to stockpile.  Once I find my size and style, I watch for sales and load up. I have a love affair with Altra shoes... I've got 6 pair of shoes in my rotation.

Spandits! are a new love of mine... I have accumulated 4 pair of shorts and am looking for more... and I have my first pair of capris. I was just chosen as a brand ambassador (yay!), so I imagine my collection will only grow.

The other item that I have accumulated are Pro Compression socks.  I love wearing them on my long runs, and they are …

Vegan Margherita Pizza

When I found the vegan mozzarella alternative recipe from Mary Ellen over at VNutrition, I knew I had to try it. It looked like a very quick and easy recipe AND it looked like it got melty.

I am a pizza lover and one of the things that I miss when trying to be dairy free is pizza. I thought the mozzarella alternative would be a good candidate to use for a margherita style pizza.

I found this vegan oil-free pesto from Angela at Oh She Glows and added that to the pizza.

For the crust I used the recipe from Jeanne Lemlin's Simple Vegetarian Pleasures cookbook for Beer Pizza. It is a quick crust that has just a few ingredients.
