Workouts - Last Week Today - July 31

Had a great week of running this week. I'm in my 3rd week training for the Houston Half.  My mileage is increasing a little bit, and I've had one "speed" work session.

We've been getting afternoon showers in Houston this week, which brought down the temps.... mid 80's sure felt better than mid 90's!  I was even able to get a run in without walking water breaks.

Here is how my week shook out:

Sunday - 9 miles slow (average pace 11:00)

Monday - Rest.

Tuesday - 5 miles easy effort (average pace 10:28).



Wednesday - Rest.

Thursday - Rest

Friday - 5 miles - 1 mi slow, then 3 x 1 mile fast (9:29, 9:27, 9:27) with 2 minute recovery, 1 mi slow.



Saturday - 3.1 miles (average pace 9:29) - Ran my 5k for the Just Keep Running virtual race.



Total miles = 22

5 Things I'm Loving Right Now

Happy Friday!!! Today I'm linking up with Eat Pray Run DC, Mar on the Run and You Signed Up For What for the Friday Five link up. This week is a free week... with summer about half way over, I'm sharing the 5 I'm loving right now!

Fresh, local produce... I love visiting the farmers market and vegetable stands during this time of year... everyone knows that homegrown tomatoes taste so much better than store-bought... but so do cucumbers, zucchini, peaches... well, just about everything does!
My S'well S'ip ... I splurged on this bottle and am so happy that I did.  I used it a few weeks ago when I went camping and poured my beer in it and it stayed cold in the 90+ degree temps.  I use it when I run errands to put cold water in so that I can have a cold drink waiting on me when I get out of the store.... and lately, I've been putting in my iced tea creation and leaving it in my car so I have a refreshing drink on the way home.  I'm always amazed when I still hav…

Zucchini 'Feta' Saute

It's summer and about the time that most folks that have a garden with zucchini are finding new and different ways to use it.  In the past I've had fried zucchini, grilled zucchini, zucchini hummus, zucchini bread and even chocolate zucchini cake!

Did you know there is even a holiday for giving away zucchini?  National Sneak Some Zucchini Into Your Neighbor’s Porch Day is celebrated on August 8.  I've always made a concerted effort to let everyone I know that I wouldn't mind being a target for this holiday... alas, no zucchini has ever shown up on my porch.

This is one of my favorite ways to prepare zucchini. My sister gave me this recipe... I modified it a bit to be "summer friendly" (i.e., no oven), and veganized it with a great tofu feta from Dreena over at Plant Powered Kitchen.

Summer Scenes From My Run

I'm fortunate enough to have access to trails that are somewhat wooded and shaded, as well as some water features on the path. I love it when I come across a little bit of wildlife, as it is fun to watch.

For the purposes of this post, I think pictures are better than words.

Acapulco Salad

I LOVE fresh tomatoes.  I don't have a garden, but thanks to roadside stands and farmers markets I am getting my fill!

I got this idea from a reader that mentioned that she used avocados in her Caprese salad... that got me thinking, why not have a composed salad similar to Caprese, but with south of the border flair... and voila! this was born.

This dish is very easily made and is quite cool and refreshing.

Workouts - Last Week Today - July 24

Had a great week of running this week. I'm in my 2nd week training for the Houston Half. All my runs are at an "easy" effort at this point in the training plan, and I'm taking them easy... incorporating walking water breaks as I need.

I wanted to thank everyone for their support in last week's post where I felt bad for missing a run on my training schedule.  It does take the pressure off a bit, knowing that a skipped run isn't the end of the world.

Early in the week there was a little break from the oppressive heat as we got pop up showers in the afternoon.  It didn't bring the humidity down any, but it did lower the temperature by at least 10 degrees.

Here is how my week shook out:

Sunday - Rest / Camping

Monday - 4 miles (average pace 10:08) with Gooses Acre Running Club.

Tuesday - 7 miles slow (average pace 10:52). Made up my missed long run from Sunday.

Vegan Spring Rolls with Peanut Dipping Sauce

The hubs is totally hooked on the summer rolls at our local Pho restaurant.  He could eat them every day! They will make a vegan version for me, but it isn't that great.

I began thinking I could make these simple rolls with shrimp for him and a plethora of fresh veggies for me.

I found a couple good recipes and instructional sites and combined everything I learned and made a few tweaks to suit my tastes and voila! I think these are the perfect summertime meal.

Beware, this peanut sauce is addictive!

 Vegan Summer Rolls with Peanut Dipping Sauce
Ingredients For the Peanut Dipping Sauce ½ cup creamy peanut butter 1 TBS coconut sugar 4 TBS hoisin sauce 1 TBS sweet soy sauce 1/2 tsp garlic powder 1 tsp Siracha sauce 1 TBS sesame oil 1 lime, juiced water chili garlic sauce For the Rolls: 6-8 rice spring roll papers 1-2 nests of rice vermicelli noodles 1 red pepper, seeded, thinly sliced 3 carrots, cut into matchsticks 6 green onions, sliced on diagonal 3 radishes, sliced thin 1/2 ripe…

5 Things On My Summer Bucket List

Happy Friday!!! Today I'm linking up with Eat Pray Run DC, Mar on the Run and You Signed Up For What for the Friday Five link up. This week is a free week... with summer about half way over, I thought I would share the 5 things left on my summer bucket list!

SUP or Stand Up Paddleboarding... this looks like so much fun, I really want to do it, I have found a couple places nearby that rent paddleboards.
Kayak... I haven't kayaked in ages, I think the last time was at Girl Scout camp way too many years ago. It looks like a fun way to explore the local lakes.
Fly a kite on the beach... truth be told I have never flown a kite.  This is the year... I think it would be super fun to make it a part of a trip to Galveston (there is always a good breeze there).
Trail running ... I'd like to get off the pavement and try running on some trails.
Get an ice cream from the ice cream truck... it doesn't seem like summer without getting an ice cream treat!

Caprese Salad

Garden grown tomatoes and fresh basil scream summer to me!

When temps are high, there is no desire to turn on the oven.

This dish is very easily made and is quite cool and refreshing.

Use your favorite fresh mozzarella or make your own.  I like this mozzarella from VNutrition.

Workouts - Last Week Today - July 17

Started training for the Houston Half this week!

I'm a little mad at myself that I already missed a scheduled run... but not beating myself up too bad about it. I ended up going camping with the hubs instead and was able to spend a great amout of time in the outdoors.

Before we know it summer will be over and we will be longing for longer days and warmer temps (hard to believe, I know), I am looking forward to a little break in the heat.

Here is how my week shook out:

Sunday - 6 miles slow (average pace 11:03). Got up and at 'em before it got too hot, 2nd day in a row not letting the bed keep me hostage - yay me!



Monday - 4 miles (average pace 10:57) with Gooses Acre Running Club.



Tuesday - Rest. Celebrated Anam's birthday with doggie cake and ice cream... she had fun!



Wednesday - Rest.  Celebrated National French Fry Day at St. Arnold's Brewery... not much can top a french fry bar and craft beer!

Grilled Vegetable and Farro Salad

Summer time is great for grilling up some vegetables!

I was lucky enough to hit up the local farmers market and pick up some garden fresh veggies.

With the hubs out of town, I hijacked the grill and made this creation. I think that grilling vegetables adds a little umph to their flavor, and I just love sesame ginger dressing on just about everything!

 Grilled Vegetable and Farro Salad
Ingredients 1 cup Farro, cooked according to package instructions Sesame Ginger salad dressing, for marinade plus extra for dressing 6 cups Vegetables, cut into bite sized pieces (I used yellow squash, zucchini, red onion, mushrooms, and red pepper) 1 can Kidney Beans, drained and rinsed Instructions Marinate vegetables in salad dressing 4 hours or overnight. Grill vegetables until firekissed and tender. Combine grilled vegetables, faro, and kidney beans in a bowl. Add more salad dressing to coat, and mix well. Serve at room temperature.

LED Light Running Belt Review + Discount

I have to admit, I wasn't really in the market for a new running belt, I have a flip belt that I had been using quite successfully.  When Level Up Runs reached out regarding their LED Light Running Belt, I was intrigued by the idea of a belt with lights.

The first thing I did when the belt came, was to see if my phone fit. I have a Samsung Galaxy Note 2 and I keep it in an Otterbox, I was please to see that my phone fit in the pouch, including the case with room to spare! It is hard finding something that will accommodate a large phone.



This belt seems to be well made and able to hold up to the toughest workout. The belt material is wide and made out of elastic material, you can adjust it easily on both sides so that the pocket stays in front and the clasp stays in back.  The pocket material is waterproof... no more sweaty phone when I am finished with my run! I haven't been able to test it on a rainy run yet.  The LED light control is housed in it's own little pocket on the…

Baytown Bud Heat Wave Race Recap

I signed up for this race on a whim, when it became clear that I had no conflicts on the 4th of July. I had remembered seeing information about the Baytown Bud race before, but with Heat Wave in the title, that always put me off investigating it any further. Once I started investigating the race, I knew it was meant to be... everything I read stated that it was a very well organized race, and a lot of fun.

I have to admit, I felt my training and preparation for this race was a little lax.  If you've read my blog over the past month, you will know that I have been struggling with getting back in the groove on running.

Eggless Egg Foo Young

I always crave Egg Foo Young when I am sick. Weird, I know... but I always know I am on the mend when I have the taste for it.

After making the scrambled "eggs" from Ashley over at Blissful Basil, I began to wonder if eggless Egg Foo Young was possible. I'm happy to say that it is!!!

 Eggless Egg Foo Young
Ingredients "Egg" batter 1/4 onion, chopped 1/2 cup carrots & peas, thawed olive oil for pan For the Sauce: 1 TBS cornstarch 1 cup vegetable stock 1/4 cup tamari 1 TBS siracha Instructions Saute onions in a little olive oil, once soft, remove from pan. Combine "egg" batter, onions, and carrots & peas in a bowl and mix well. Heat a greased skillet over medium heat, when hot add 1/2 cup of the "egg"/veggie mixture. Let set up a bit, then scrape edges into the center to make a nice sized patty. Cover and cook for 3-5 minutes until set up, then carefully flip and cover and cook an additional 3-5 minutes. Workouts - Last Week Today - July 10

Kept up my running routine, and feeling great.  I can't believe training for the Houston Half starts next week! This summer is flying by!

I remembered to wear my Jawbone Up24 a few times this week. I have determined that I can easily get in 10k steps if I walk both dogs at night. The girls are loving the extra attention that brings since they get to go with me for evening walks. I don't take them out on runs as much in the summer time because I think it is just too hot for them... sometimes it feels too hot for me, but at least I don't have on a fur coat!

Sunday - Rest day... I declared Sunday a "pajama day"!  I hadn't had one in so long, so I enjoyed it.  Read (War Brides), watched tv (Mr. Selfridge), and a couple of movies (Hot Pursuit and Everest).
