Zucchini Hummus



Did you know today is Sneak Some Zucchini On Your Neighbor's Porch Day? I've never been too quiet about letting all my friends and neighbors know I wouldn't mind if they snuck some zucchini onto my porch... but sadly, it has never happened!

In honor of this odd holiday, I've created a great hummus recipe using some zucchini I bought fresh from the farmers market.

Zucchini Hummus
Ingredients
2 small zucchini (about 4-5 inches)
1 head garlic, roasted
1/4 cup cilantro leaves
1/4 cup tahini
1 lemon, juiced
1 can great northern beans
1/2 - 1 tsp chili-garlic sauce
1/4 tsp sea salt
water
Instructions
Grill zucchini until grill marked and starting to soften (about 10 minutes), Roughly chop.

Add all ingredients ingredients except water to bowl of food processor and process until smooth. Add water as needed to get to desired consistency.

  3. Love hummus and we've mixed it up with so many things but I've never made a zucchini hummus! Missing our garden and abundance of zucchini even more now.
