Cucumber & Tomato Salad

wp-1472774081799.jpgWhile others are lamenting the end of summer, I am still in summer produce heaven ... thanks to the warm climate of Houston.

Cucumbers seem to be the best produce that hangs on for the longest.  Tomatoes just don't do well in all this heat.

I love a good salad, especially with cucumbers.

This salad is reminiscent of the salads on so many tables in the midwestern summers... cucumbers, tomatoes and a vinaigrette.

I've changed this one up a bit and added a greek flavor, with the vegan feta and kalamata olives.

  1. Oooh yes! It's still hot here and I've been craving cool salads like this. It totally reminds me of a nice, revamped salad I used to have in the summers growing up. And homemade vegan feta? Yes, please!

  2. Great idea to add the vegan feta! It was cold here the past weekend as a tropical storm was around us but it's back to the 90s in NJ so this will be a perfect option for me this week!
