Roasted Sweet Potato and Broccoli Bowl

wp-1475258001108.jpgThis has got to be the laziest "Healthy Vegan Friday" post there ever was.

I can't even take credit for the recipe.

All I can tell you is that after making the Roasted Broccoli, Sweet Potato, and Chickpea Salad from Minimalist Baker, I began to wonder if this would make a good Buddha bowl.

I have a confession to make... I've never made a Buddha bowl. While I'm confessing... I've never had roasted broccoli either, I can't believe I have been missing out on that for so long either!

I quickly consulted Google to determine the proper make up of a bowl, and found that it was missing one ingredient - a grain. I found some farro in my pantry and cooked it up.  Assembled the ingredients and voila! I had made my first Buddha bowl.

So there... that is it!  Grab the recipe for Roasted Broccoli, Sweet Potato, and Chickpea Salad, cook up some Farro... layer it in a bowl and nosh to your hearts content.

It must also be said that the Roasted Broccoli, Sweet Potato, and Chickpea Salad is equally good on it's own!

p.s. I added a small onion halved and sliced to the roasted vegetables.

  1. "This has got to be the laziest “Healthy Vegan Friday” post there ever was." It's not lazy girl! Quick and simple does not equate lazy! You totally were missing out not having roasted broccoli. Roasting makes things taste SO GOOD!
    Sounds like a great goddess bowl - I think we all get inspired by other recipes - I think it's all pretty much been done by now ;)

  2. I agree with Kimmy - not lazy at all! I love roasting veggies but I'll tell you, I've never roasted broccoli before either. I feel like I need to so some kind of roasted broccoli recipe soon now and it looks delicious! :)

  3. Goddess Bowl... I love that! I love roasted vegetables, I don't know why it never occurred to me to throw some broccoli in the mix!
