Campfire Burritos

This past weekend I went out to the hub's deer lease to camp.

I wanted to get a little creative about food, because you can only eat so many veggie burgers in a weekend.

I found some recipes for burritos cooked at a campfire and modified the ingredients to be plant based.

These come out really good and are quick and easy.  The tortillas become a little crisp after cooking.

Campfire Burritos
Ingredients
Burrito size tortillas
Vegetarian refried black beans
Cilantro-lime cauliflower rice|http://www.insonnetskitchen.com/cilantro-lime-cauliflower-rice/
Daiya cheddar cheese shreds
Gardien Chick'n strips
Salsa
Instructions
Fill tortilla with ingredients. Roll halfway, fold over ends and continue rolling into burrito. Wrap the burrito in foil.

Cook the burrito over smoldering coals farther from the main flame for 5 minutes, flip and continue cooking for 5 additional minutes. Remove from heat. Allow to cool slightly and serve.

  5. Oh these sound good. Just when I thought nothing could get better about burritos, you cook it over a campfire. Campfires make everything better! Marshmallows... burritos... =)
