Vegan Cauliflower Nachos



I love nachos... but I could seriously do without eating the tortilla chips.

I recently came across Greenback Gal's Healthy Cauliflower Nachos and I knew this was something that I had to try.

I switched up her recipe a bit, adding a lentil-walnut taco meat and vegan cheese sauce and vegan sour cream.

The cauliflower, roasted in taco seasoning is really good... I couldn't help myself from munching on that while I prepared the rest of the components.

These are definitely "main dish" nachos, and full of good for you ingredients!

 Vegan Cauliflower Nachos
Ingredients
1 head cauliflower, separated into large florets
olive oil
guacamole
salsa
Instructions
Toss the cauliflower florets with oil and taco seasoning. Spread on a baking sheet and roast at 425 for about 20 minutes.
Top the roasted cauliflower with the taco meat, no-cheese sauce, tofu sour cream, guacamole and salsa.
