Med-Veg Pizza

Pizza... it was my favorite food in High School... I thought I could eat it every day without growing tired of it (note:  my parents didn't allow that to happen).

The inspiration from this recipe comes from Connoisseurus Veg.  If you haven't checked out her blog, you should! She has some great recipes!

What intrigued me about this pizza was having a layer of hummus.  In addition to that, I added some feta cheese and veggies that I associate with Mediterranean food. You could make this vegan by omitting the cheese, or substituting a dairy free version.

    My parents did allow this to happen. My sister once ordered pizza for one of her birthday parties, without realizing it was buy one get one and we ended up with pizza leftovers for a very long time. I did manage to get sick of pizza for a very short time ;)
    Hummus on pizza! Great idea, I will have to try that out. And we enjoy artichoke hearts on our pizza more often than not, but we like the marinated kind.

  6. Thank you for this lovely recipe, Vicki. Eating pizza is a one of life's guilty pleasures. Having been to Italy five times, and being a pizza lover to begin with, I consider myself a knowledgeable and snobby pizza connoisseur. My lifelong affair with pizza has turned into an obsession, one that has only increased since going vegan.
