Workouts - Last Week Today - May 28

Welcome to my weekly workout recap, today I'm recapping my workouts from last week today.

My vacation ended on Sunday, but not before I got a run in on the country roads before I left... bonus, it was cool out!   My 30 burpees for 15 days challenge came to an end this week, I was very happy to see that end.

I got in 4 runs this week, including one with my furry friend Anam.  I had some nice downtime too with the hubs after returning from my solo vacation.  My legs are finally starting to feel back to normal, I'm thinking the burpees took their toll on my legs.

Workouts Last Week Today:

Sunday - 4 easy miles. 30 burpees.

Monday - 30 burpees.

Tuesday - 30 burpees (last day of challenge - woot!).

Wednesday - Rest.

Thursday - 6 easy miles.

Friday - 4 easy miles with Anam.

Saturday - 6 miles.  These were some hard miles... it was hot and steamy (when I finished it was 88 with a real feel of 103), summer has made it's return.

Total Miles = 20

May Runfessions

Happy Friday!  I don't know about you, but I'm ready for the long weekend!  But, before we get into the weekend festivities... I've got a few runfessions to make.

I RUNFESS...

I finished up the "30 burpees for 15 days" challenge ealier in the week.  I didn't really see any vast improvements with my fitness, but my legs are still incredibly sore and I'm blaming it on the burpees and not all the "gently rolling hills" I ran while I was on vacation.

I ran in two races when I was on vacation, a half marathon and a 5k.  My nieces and nephew ran 5k at both races too. I couldn't resist the opportunity to get some matching capris for my neices and I to wear at the 5k.  If you want your own, head on over to Spandits! The code SPANDITSLOVE gets you 10% off your first order, be sure to tell them Vicki sent you.

While I did really well on keeping up on my fitness routine while I was on vacation, I didn't keep up so well on blogging... I was out having f…

Workouts - Last Week Today - May 21

Welcome to my weekly workout recap, today I'm recapping my workouts from last week today.

Last week I was in NE Kansas visiting my family and friends. While there, I got in 3 runs and a 5k last week, and a half marathon the week before (recap coming soon).   I also continued with the 30 burpees for 15 days challenge... I'm really looking forward to the end of the 15 days.

One of my goals for the month of May was to keep up my fitness routine while I was on vacation... I think I nailed it!

Workouts Last Week Today:

Sunday - 4 recovery miles. 30 burpees.

Monday - 30 burpees.

Tuesday - 4.5 easy miles. 30 burpees.

Wednesday - 30 burpees.

Thursday - 4 miles (in final mile did sprints between every other telephone pole). 30 burpees.

Friday - 30 burpees.

Saturday - 30 burpees. TBI Awareness 5k.

Total Miles = 15.6

Burst Cherry Tomato Spaghetti with King Mushrooms

In my CSA share the past few weeks, we've had a lot of cherry tomatoes.  I love just snacking on them, but they seemed to pile up and become quite an overabundance.

In the Run Fast Eat Slow cookbook, there was a recipe for burst cherry tomato linguine with shrimp.  I opted to veganize it and use king mushrooms.

I really enjoyed this quick sauce and it was fun to watch the cherry tomatoes burst.  The king mushrooms added a nice "meat"iness to it.

Workouts - Last Week Today - April 14

Welcome to my weekly workout recap, today I'm recapping my workouts from last week today.

This week I only got in 1 run, aside from my half marathon on Saturday.  I opted to cut back on my runs as I was feeling a bit sore and decided to focus more on foam rolling and stretching so my legs would feel fresh for my half.

I started my 30 burpees for 15 days challenge on Tuesday, 5 days in and it is HARD!

Workouts Last Week Today:

Sunday - 8 miles... slow.

Monday - Rest.

Tuesday - 30 burpees.

Wednesday - 30 burpees.

Thursday - 30 burpees.

Friday - 30 burpees.

Saturday - 30 burpees. Running with the Cows half marathon (recap coming soon)

.

Total Miles = 21

Running With The Cows Goals

Happy Friday! I'm a little excited today, because in just a few hours I'll be clicking my heels together and going "back home" to Kansas to spend a week with my family and friends.  While I'm there I will be doing a couple races, the first of which is tomorrow - Running with the Cows.  I had so much fun at this race last year, I had to plan my trip around it so I could run it again this year (even my nieces who ran the 5k last year, thought it should be an annual event).

This year in addition to my nieces, my nephew will also be running and my sister will be walking the 5k... it's going to be a great family event.  I think my mom will be coming along to hold coats and to cheer us along.
Running with the Cows Goals

Have fun!! This is the most important goal... I mean seriously, why do it if it isn't fun?
Start out slow... run 2nd half of race faster than 1st half.
Time goals... sub 2:08
Be confident... trust in the work I've put in.

Soba Noodle Bowl with Roasted Radishes

I belong to a CSA, I love being able to support community agriculture and get fresh farm grown vegetables.  It's really a win-win!

Sometimes, in my share I get an overabundance of certain vegetables that I just don't know what to do with.  This year it was radishes.  While I like radishes in my salads and the hubs likes them raw with salt... there's only so many radishes you can eat this way.

I took to google to find out different ways to prepare radish, and became intrigued at the prospect of roasting them.   Once roasted, the radishes have a more mellow flavor and are so good!

I found this recipe for Roasted Radishes with Soy Sauce over at Kalyn's Kitchen and that got me thinking of bowl possibilities.

I paired the radishes with soba noodles, baked tofu, sauteed spinach, avocado, and a spicy tahini dressing. It was pure deliciousness!  I hope you enjoy.

Workouts - Last Week Today - May 7

Welcome to my weekly workout recap, today I'm recapping my workouts from last week today.

This week I felt was a good week.  I was able to get in 4 runs this week (3 with the dogs), and I continued doing some planking and did some squats and wall sits.  We had some really nice weather (very low humidity and temps in the low 80s), which made running feel effortless.

I got word on Wednesday that I'm going to run the Chicago Marathon!  I'll soon be trading in upkeep mileage for marathon training!  Looking forward to round #2.

Workouts Last Week Today:

Sunday - 12 miles... slow.

Monday - Rest. 1:00 plank, 30 squats, 0:45 wall sit

Tuesday - 4 miles easy with Anam. 1:00 plank.

Wednesday -  Rest. 1:00 plank, 30 squats, 0:45 wall sit.

Thursday - 5 miles easy with Sorcha + 5 hill repeats = total mileage 6 miles.

Friday - Rest.

Saturday - 5 miles easy with Anam.

Total Miles = 27

May Coffee Date

Today I'm joining the Ultimate Coffee Date for some catching up!  On the first Saturday of the month... we gather with our warm beverage of choice for some catch up!

Over tea,  I'd tell you that I'm really excited for my upcoming vacation.  I'm going back home to NE KS (to my little town near Lawrence, KS), to visit my family and friends.  I'll be there a little over a week and my schedule is already filling up with ball games, 8th grade graduation, college graduation parties, and races!

Over tea or coffee, I'd share with you that I'm running a few races while I'm up in Kansas.  First off is the Running With The Cows half marathon on the 13th, then on the 20th I'm running a 5k to benefit TBI awareness at my niece's school.
