Runfessing over Tea

Woohoo for Friday!  I am so ready to get this weekend started! But, before we get into the weekend festivities... Join me over tea for some runfessions.



I RUNFESS...

I have vacation brain... we leave for Jamaica on Monday and I'm a bit excited.  I have been listening to Bob Marley on my runs... and we've been packing for the past 2 weeks.  I've got 2 runs to do while I'm on vacation to keep to my training plan - easy 4 milers... I've already level set with the hubs, just need to make sure the running shoes and sports bra makes it into the suitcase.



I've started training for the Chicago Marathon... I'm in week two and the mileage is easy.  However, I want to eat everything in sight... could it be I'm burning all the calories with my cross-training that I'm actually doing this time instead of thinking about it?  I don't really think so, I need to rein this in.

June Recap & July Goals

Seriously, it feels like June was just yesterday!  As we near the end of June, I'm checking in with my progress against the goals I made at the beginning of 2017 and also looking at my monthly goals.



At the beginning of the year, I set some goals to work on throughout the year.
2017 Goals:

Run my first marathon.Complete - check out the recap here.
Run 1,200 miles this year. Making progress.  I am up to 439 miles for 2017.  
Try out trail running. Nailed it! - ran a trail half marathon in March - check out the recap here, and ran a 25k trail race  in April - recap here.  I liked it so much I have 2 more on the schedule for July and September.
Half Marathon PR - sub 2:02:38.I've decided to table this one.

June Goals

Hit the gym at least 2x/week a week for strength training. C - I did not start going to the gym until the week of the 19th, since then I'm on track to make it 2x/week for strength/cross-training and have been a couple times to get some miles in when it was storming out.

Bruschetta Pasta

Bruschetta Pasta... this recipe reminds me of the simple flavors of bruschetta.  The sauce is an uncooked tomato sauce with basil and garlic.  I really think that only ripest, home grown tomatoes will do for this dish.   Fortunately, I was blessed with a bag of homegrown tomatoes recently.

This recipe is a variation from Jeanne Lemlin's Vegetarian Pleasures: A Menu Cookbook.  I adjusted to what I had on hand and cut down the oil.  Did you know that this cookbook was the very first vegetarian cookbook I ever owned?  It is in "well loved" condition, sadly, it is out of print.  She has a new cookbook out called Simply Satisfying which is supposed to be an updated version of Vegetarian Pleasures.

Chicago Marathon Training - Week 1

Last week I started my 16 week training cycle for the Chicago Marathon.

This training cycle I'm incorporating a few things that I didn't do last training cycle; cross-training and strength training.  I also plan on keeping up with my planking. The hubs recently went out and got us a gym membership, which will definitely come in handy with those goals as well as provide me with a treadmill option too.  This week I used yoga as both cross-training and strength.  Maybe a bit of a stretch, but the way my muscles felt afterwards, I think it did both jobs.

This cycle I'm also focusing on eating a lot better.  While my diet is pretty good, I really want to eat a lot cleaner and avoid processed convenience food as much as possible.  Last week was a win as I prepped a weeks worth of lunches on Sunday, and had a plan for dinner that week too!  This Curry Roasted Vegetable & Kale Salad from Minimalist Baker kept really well for 4 days worth of lunches, and I enjoyed the leftovers f…

Great Foods for Summer

Happy Friday! It is definitely summer in H-town... and looks like the warm hot weather is hear to stay for a while.  I'm joining in with the Friday 5 fun today, where the topic is summer treats.  Since I don't eat a lot of traditional "treats", I'm sharing my top five great foods for summer.

In the summertime, my favorite foods are mostly vegetables... generally raw in some sort of salad type dish.  These are five dishes that I like to treat myself to in the heat of the summer.

Spring Scenes From My Runs

Today I'm joining the lovely ladies for Tuesdays On The Run.  Where we talk about a different topic each week that is running related. Today's topic is "Spring Scenes From My Run"

It's sprummer in H-town, Summer officially begins tomorrow... but it already feels like summer in the spring.  Foliage is lush and green... flowers are blooming... and the turtles are out!

I've mainly been running on the 2 wooded paths near my house that have a pond off them so that I can take my dogs with me and they can cool off at the half way point.

This spring, I was able to spend a week visiting my family in Kansas in May and had the opportunity to run on the country roads I ran on when I was in school.  So I had a few different scenes on my run... that included some animals other than turtles, rabbits, and squirrels.

Grilled Summer Squash Tacos

By far my favorite thing about summer is the vast bounty of vegetables available.  Everything tastes so much better when it is picked fresh instead of harvested and then trucked in.

This year, I found a CSA to join and have been enjoying the farm fresh vegetables.  One unexpected outcome from it is the challenge to my culinary skills,  by trying to find different ways to prepare vegetables.

On the last share, I got 6 (6!) decent sized summer squash.  The hubs isn't a huge fan of squash, but I certainly am!  I set out to find a unique way to serve it, and I think I hit it out of the park with these grilled summer squash tacos!

Mediterranean Style Cucumber Salad

It's summer here in H-town and farmers markets are bursting at the seams with all the great fresh produce.  I had a plethora of cucumbers, tomatoes, and banana peppers from my recent CSA share, so I opted to make a cucumber salad.

I added Kalamata olives and roasted red pepper to it as well.  It is seasoned with Greek seasoning and dressed with a balsamic vinaigrette.


Mediterranean Style Cucumber Salad Ingredients 2 cups cucumbers, peeled and chopped 1 cup tomatoes, chopped 2 banana peppers, seeded and diced 1 roasted red pepper chopped 1/4 cup Kalamata olives, sliced 1/4 cup feta cheese, crumbled 1/2 TBS Greek seasoning Balsamic vinaigrette to coat salt & pepper, to taste Instructions
Combine all ingredients together, toss with balsamic vinaigrette. Taste and season with salt and pepper as needed.

Workouts - Last Week Today - June 11

Welcome to my weekly workout recap, today I'm recapping my workouts from last week today.

There isn't much to report this week.  With training for the Chicago marathon kicking off on the 19th, I opted to take it easy.  My legs are still feeling less than stellar (not sure why, thinking those dang burpees), and I need them to feel as fresh as possible during traing.  I rolled as much as I could remember to do, and by Saturday, my legs started feeling much better!  I kept up on my plank-a-day x2, with the exception of Monday (I was just too exhausted).

Both runs this week were with my dog Anam... she is always ready to go out!  I know that the days of her coming along are soon going to end until we get over the brutal temps of summer, so I'm taking advantage of every opportunity we have.
Workouts Last Week Today:
Sunday - Pajama day!!!  1:00 am plank, 1:00 pm plank.

TBI Warrior 5k Recap

During the preparations of my vacation to Kansas to visit my family, the possibility of running an additional 5k during my time there was mentioned.  It was described to me as a fundraiser to help a classmate of my nieces, after hearing that, I was all the way in!  I would also be remiss to mention that my nieces and nephew were all in too!  So, with that being said, we all signed up for the TBI Warrior 5k.

The race was held on May 21st at 9am... I was thrilled with the 9am start time, in addition to it being very close to my sister's house.  While I do wake up for races at 3:30 without much complaining, it isn't my favorite thing to do, I was excited about being able to sleep in a bit.

I had started "stalking" the weather immediately after Running With The Cows... I was hoping for a much cooler day than the previous weekend. We were fortunate with the weather, as the storms came through overnight... and the weather was a bit chilly, leaving us with temps in the high 5…

Fitting It All In - Running + Vacation

Happy Friday! I'm ready for a little TGIF... this week has been a doozie, to say the least.  I'm joining in with the Friday 5 fun today, where the topic is running + vacation.

I've got vacation on my mind a lot these days,  I just came back from vacationing in Kansas... and I'm about to leave out on a vacation in Jamaica.  It takes a little finessing to be able to keep your fitness routine up while you are on vacation.  I've been successful at it and I've failed miserably.  These are some tips to be a success!
Fitting it All In - Running + Vacation

Communicate!  If you want to run while you are on vacation, the best way to do it is to communicate with your people.  Let them know that you want to spend x amount of time running so that they can plan accordingly. Who knows, they may want to join you!
