Mediterranean Style Cucumber Salad

It's summer here in H-town and farmers markets are bursting at the seams with all the great fresh produce.  I had a plethora of cucumbers, tomatoes, and banana peppers from my recent CSA share, so I opted to make a cucumber salad.

I added Kalamata olives and roasted red pepper to it as well.  It is seasoned with Greek seasoning and dressed with a balsamic vinaigrette.


Mediterranean Style Cucumber Salad
Ingredients
2 cups cucumbers, peeled and chopped
1 cup tomatoes, chopped
2 banana peppers, seeded and diced
1 roasted red pepper chopped
1/4 cup Kalamata olives, sliced
1/4 cup feta cheese, crumbled
1/2 TBS Greek seasoning
Balsamic vinaigrette to coat
salt & pepper, to taste
Instructions

Combine all ingredients together, toss with balsamic vinaigrette. Taste and season with salt and pepper as needed.
