Totchos

Want a different canvas for nachos instead of tortilla chips?  How about tater tots?  These nachos... or totchos - are amazingly good and full of the traditional nacho flavors, but with potatoes (in the form of tater tots) as a base instead of tortilla chips.

For assembly, this works best in a casserole dish or something with sides so that you can cram the tots in so they don't roll around the plate.

The toppings are pretty much up to your imagination!  I think the more ingredients you have the better the flavors will be.  It is easily scalable depending on how many hungry people you have.  Prepare to enjoy!

Totchos

Ingredients:
Tater tots

Toppings:
Refried beans
Vegan taco meat
Vegan cheese (I used this recipe)
Vegan sour cream (I used this recipe)
Guacamole
Jalapeno slices (pickled or fresh)
Black olive slices
Green onion slices
 Salsa

Method:
Cook tater tots according to package directions until golden and crispy.
Place in a baking dish with side, cram them in until there aren't any holes.
Top with ingredients (except for guacamole and sour cream) and pop in oven for another 10 minutes.
Add guacamole and sour cream.
Dig in!
