Chocolate Peanut Butter Crunchies



What would Christmas be like without Christmas candy... or cookies?  Sad, it would be sad.

One candy recipe my family has made for years is "white candy"... it has peanut butter, peanuts, marshmallows, and rice krispies coated in almond bark.  It is quite good.  I was hoping to veganize that recipe, but life happened and I wasn't able to locate dairy free white chocolate.  So... instead, I took what I liked from that recipe and subbed in dairy free chocolate chips for the almond bark.  I think I have a winner!

 Chocolate Peanut Butter Crispies
Ingredients
16 oz dairy free baking chips (I used Chocolate Dream semi-sweet chips)
1/2 cup smooth peanut butter
2 cups puffed brown rice cereal
2 cups salted cocktail peanuts
Instructions
Melt the chips in the microwave.
Add peanut butter and stir until smooth and combined with the chocolate.
Add cereal and peanuts.
Drop by teaspoonfuls onto waxed paper.
Let sit overnight to harden.

  1. Oh goodness I'll bet this stuff is divine. There's a candy store on Coronado Island that makes something they call "Coronado Crunch" that sounds just like the white chocolate confection you speak of. If you have that recipe, I'd love it!

  2. ZOMG these sound so good! They kind of remind me of these "drop" cookies I used to make growing up, but much better ;) And yes, totally agree that Christmas would be a sad affair without decadence like this. Oh and if you ever manage to track down vegan white chocolate - let us know. I've been hunting for some myself.
