Cucumbers seem to be the best produce that hangs on for the longest. Tomatoes just don't do well in all this heat.
I love a good salad, especially with cucumbers.
This salad is reminiscent of the salads on so many tables in the midwestern summers... cucumbers, tomatoes and a vinaigrette.
I've changed this one up a bit and added a greek flavor, with the vegan feta and kalamata olives.

Oooh yes! It's still hot here and I've been craving cool salads like this. It totally reminds me of a nice, revamped salad I used to have in the summers growing up. And homemade vegan feta? Yes, please!
ReplyDeleteGreat idea to add the vegan feta! It was cold here the past weekend as a tropical storm was around us but it's back to the 90s in NJ so this will be a perfect option for me this week!
