Caprese Salad

When temps are high, there is no desire to turn on the oven.

This dish is very easily made and is quite cool and refreshing.

Use your favorite fresh mozzarella or make your own.  I like this mozzarella from VNutrition.

  3. I survived a whole summer off nothing but this salad! Really missing the fact that we don't have a garden this year (because we are gone over half the summer and just wouldn't be able to keep it up) one of my favorite things to make with all the tomatoes and basil.   8. I didn't get a garden in this year either... relying on friends, roadside stands and farmers markets to get my fresh tomato fix.
