Buffalo Cauliflower Pizza

Before the Super Bowl, I was trying to figure out what to do with the package of pizza dough and head of cauliflower that I had in my fridge.  Inspiration struck and this pizza was created - Buffalo Cauliflower Pizza.

Buffalo Cauliflower Pizza


This pizza combines a white bean hummus, cauliflower, and hot wing sauce.  Top it off with some sliced celery and blue cheeze dressing.

I used a whole wheat ready made crust from Trader Joe's.  Homemade pizza dough would probably send this over the top!

Buffalo Cauliflower Pizza
Ingredients
For The Hummus
1 can great northern beans, drained and rinsed
1 lemon, juiced
2 garlic cloves
1/4 cup tahini
1 tsp cumin
1/4 tsp salt
1/2 tsp onion powder
water
For The Pizza
1 frozen or fresh pizza crust
1/2 cup pizza sauce
2 TBS hot wing sauce (I used Frank's Hot Sauce)
2 cups cauliflower steamed
1/4-1/2 cup hot wing sauce
1/2 cup Daiya cheddar syle shreds
1 celery stalked, sliced
Daiya blue cheeze dressing
Instructions
For the Hummus
Combine beans, lemon juice, garlic, tahini, cumin, salt, and onion powder in the bowl of a food processor. Process until smooth. Add water as needed to get desired consistency.
For The Pizza
Spread and flatten pizza dough into a round shape and place on baking sheet.
Spread hummus on pizza dough
Mix the pizza sauce and 2 TBS of hot wing sauce together and spread on top of hummus.
Toss the cauliflower with hot wing sauce, then arrange on top of the pizza.
Sprinkle the cheeze on top.
Bake according to pizza dough instructions.

To serve, sprinkle with celery slices and drizzle with blue cheeze dressing.
